This video features my meals for a day on a certain day off.
I had some tempura flour nearing its expiration date in the refrigerator, so I decided to make a tempura rice bowl for dinner. 😋 Since making tempura often leaves me with leftover ingredients, I prepared the ingredients I wanted to use for tempura gradually throughout the morning and lunch for dinner. 🦐
My ideal is to make meal prep while cooking to make weekdays easier, but I'm always experimenting with it. There's a small sense of achievement when I can use ingredients up beautifully while reusing them. 🥰

*Breakfast*
Miso soup with burdock, maitake mushrooms, tofu, and a poached egg
Dashi pack, burdock, tofu, green onion, miso, egg
Gently add the egg to the edge of the pot and simmer for 5 minutes to prevent the egg whites from spreading.
Rice cooked in a pot
Soak the rice for about 30 minutes, cook on high heat until boiling, cover and cook on low heat for 10 minutes, then let it rest for another 10 minutes.
Before covering, scrape the rice from the bottom of the pot to prevent burning.
(If you want to avoid burning the rice)
Simmered shishito peppers
Shishito peppers, shirasu (whitebait), ½ cup sake, 1.5 tablespoons mirin, ½ tablespoon soy sauce
Add all ingredients to the pot, bring to a boil, then simmer on low heat until tender.

Edamame rice balls
Frozen edamame, cheese, bonito flakes, salted kelp, sesame seeds
*Lunch*
Udon with eggplant, pork, and green onion dipping sauce
Sauté the ingredients in 1 tablespoon of sesame oil until browned.
Add 1 cup of water, 1 dashi pack, ½ cup of noodle sauce, and ginger to taste, and bring to a boil.
It’s also delicious with soba noodles.
*Snack*
Pumpkin steamed cake
80g pumpkin, 1 egg, 50g sugar, 80ml milk, 100g cake flour, 5g baking powder, 2 tablespoons rice oil
Place in a steamer and steam on high heat for 15 minutes.
*Dinner*
Tempura rice bowl
Pumpkin, shishito peppers, eggplant, shiso leaves, maitake mushrooms, soft-boiled egg, shrimp, nori, mentaiko (cod roe) うwith seaweed, mentaiko wrapped in shiso leaves.
Burdock and mitsuba tempura
Cut the ingredients into similar sizes, dry them, lightly coat with flour, mix in enough batter to coat, add to oil, swirl it around, then gather it into one piece, wait until it firms up, and flip it over.
The temperature should be around 170°C (340°F).
The batter should drop and rise when it's ready.
Tempura dipping sauce
2 tablespoons of concentrated noodle sauce, 1 tablespoon soy sauce, 1 tablespoon mirin, ½ tablespoon sugar, and 3 tablespoons of water.
