(1) Roast Leg of Lamb. Slow Cooked with Garlic, Sage and Rosemary. Perfect roast leg of lamb every time with this recipe. You cannot beat a Spring roast leg of lamb, usually under five months old, probably the ultimate Sunday roast. It’s actually quite easy to make, just follow a few simple steps and your lamb will be to die for. This one has the bone still attached, hence making it tastier and extra moist which is my preference. It’s cooked at a lower temperature for a longer time resulting in more even cooking throughout plus juicier. Use woody rosemary if you can, it will be easier to insert. If you don’t have a roasting rack, cut a peeled onion in two and place your lamb leg on the onion so it sits higher than the liquid.
Lamb is a wine friendly meat, so have it with a nice bottle of medium to full bodied red, like a Bordeaux or Cabernet Sauvignon.
(2) Rich Lamb Stew. Italian-inspired with honey and caramelised onion
This is the ultimate slow-braised stew, with tender, moist lamb and rich, fused flavours. Lamb is a healthier red meat, packed with vitamins, B12, and omega-3s, especially if grass-fed. This one-pot meal includes carrots, peas, and potatoes, making it a hearty dish. It tastes even better the next day and freezes well for quick meals. (5) Lamb Ragu Pasta with Rich and Intense Flavours. Rich Lamb ragu has to be the ultimate comfort food. When I think of Italian Nonnas, this is what I imagine. This version is made using Fusilli al Ferretto pasta, but you can make it with the pasta of your choice. This fusilli shape works so well with this lamb ragu as it wraps itself inside and out resulting in pure awesomeness in every mouthful. Make a big batch and freeze it, double or triple this recipe, it’s well worth it and not much more effort. You will however need a large Dutch oven pot for larger quantities. You can also do it on the stove top on very very low flame, stirring it every 15 minutes or so. I prefer the oven as you leave it and forget it, plus the flavours seem to intensify. Enjoy this lamb ragu pasta with fusilli or your favourite pasta.
(6) The Secret to a Juicy Smokey Leg of lamb. Cooked in BBQ Greek style with a Mediterranean stuffing. Cruising on my motorcycle on the beautiful Mornington Peninsula in Australia, I bought a leg of lamb to barbecue on my Weber kettle BBQ. High heat, followed by slow cooking with a hint of smoke is the secret. See how juicy this leg of lamb is, complete with a feta cheese and semi sundried tomato stuffing. You could also make this recipe in a standard oven without the smoke. There is simply no better way to cook a leg of lamb then this process in a BBQ.
