For this year’s New Year’s celebration, I spent the time alone doing what I love—cooking my favorite dishes and enjoying my time as I pleased.
When the year changed, I went out and noticed that many stores were open and trains were running all night. I saw so many people working and felt deeply grateful.

Kombu rolls
Quick-cooking kombu, kanpyo, 1 tbsp vinegar, 2 tbsp sake, 2 tbsp mirin, 2 tbsp sugar, 1.5 tbsp soy sauce
Refrigerate: 5 days / Freeze: 3 weeks
Soy-marinated shrimp
1 tbsp sake, 1 tbsp mirin, 1 tbsp sugar, 3 tbsp soy sauce, 4 tbsp water, ginger, garlic, chili (to taste)
Glossy simmered shrimp
4 tbsp each sake and mirin, 1 tbsp sugar, 2 tsp light soy sauce, 2 tbsp dashi, a pinch of salt
Refrigerate: 4 days / Freeze: 2 weeks
Kazunoko
50 ml dashi, 50 ml each sake and mirin, 1.5 tbsp light soy sauce
Refrigerate: 7 days / Freeze: 3 weeks
Shrimp miso soup
About 500 ml hot water, 1 tbsp sake, miso
Roast shrimp heads thoroughly, add hot water, and dissolve miso
Scallop simmered in ginger sauce
2 pieces ginger, 3 tbsp each soy sauce and sake, 4 tbsp mirin, 100 ml water
Refrigerate: 5 days / Freeze: 2 weeks
Yawata-maki
Vegetable filling seasoning (burdock and carrot):
200 ml dashi, 1 tbsp each soy sauce and mirin, 2 tbsp sake
Meat roll seasoning:
2 tbsp each soy sauce and mirin, 1 tbsp each sake and sugar
Refrigerate: 5 days / Freeze: 4 weeks
Chikuzen-ni
200 ml dashi, 1 tsp sugar, 2 tsp mirin, 1.5 tbsp soy sauce, 3 tbsp sake
Refrigerate: 5 days / Freeze: 3 weeks
Japanese-style roast beef
600 g beef roast, 150 g miso, 2 pieces ginger (grated), 3 tbsp each sake and mirin
Buri grilled with sesame sauce
2 tbsp each sesame paste, soy sauce, and mirin, 1 tbsp sake
Refrigerate: 4 days / Freeze: 2 weeks
Kombu with roe
100 ml dashi, 200 ml sake, 2 tbsp light soy sauce
Red and white namasu
3 tbsp sugar, 4 tbsp vinegar, 1 tsp salt
Stuffed spicy cod roe lotus root
2 tbsp each vinegar and sugar, 4 tbsp hot water, 1/2 tsp salt
Datemaki
6 eggs, 100 g hanpen, 3 tbsp sugar, 1/2 cup mirin, 1/4 tsp salt
Refrigerate: About 5 days

Kumquat simmered pork
5–6 thin slices of ginger (unpeeled), 2 cups water, 5 tbsp mentsuyu, 5 tbsp sake, 4 tbsp sugar
