Recently, the weather has been just right, not too hot or too cold.
Cuddling up in a light blanket and lounging around is pure bliss.☕
I find myself gazing at the two remaining pages of my calendar, feeling excited about what to do during the year-end and New Year holidays.

▶Recipe
Candy Apple
60ml hibiscus tea, 200g sugar
Mix and heat; do not stir as it will crystallize.

Kaki no Tane Salmon Fry
Salmon, 50g kaki no tane, salt, and pepper, all-purpose flour, egg
Bake at 200℃ for 20 minutes.

Tartar Sauce
1 boiled egg, 2 tbsp pickles, 4 tbsp mayonnaise, salt and pepper, 2 tsp lemon juice.

Sweet Potato Rice
2 cups rice, 300g sweet potato, 1 tbsp salted kelp, 1 tbsp sake, ½ tsp salt.

Komatsuna with Egg
(Recipe from Harumi Kurihara: www.yutori.co.jp/shop/rp/rp150966/)
6 eggs, a pinch of salt and pepper, 600g komatsuna, 2 cups chicken broth, 2 tbsp soy sauce, 1.5 tbsp oyster sauce, 2 tbsp shaoxing wine.

Mushroom Cappuccino Soup
130g mushrooms, half an onion, 1 tbsp white wine, 150ml water, 200ml milk, 10g butter, salt and pepper, herbs, 50ml milk for topping.
Sauté onions and mushrooms in butter.
Add white wine, water, and herbs; once the liquid reduces, add milk.
Cool slightly and add the remaining milk, then blend.
Return to pot and adjust seasoning with salt and pepper.
Top with frothed milk.

Flower Rolls
155g all-purpose flour, 45g bread flour, 2g yeast, 3g salt, 40g sugar, 5g sesame oil, 45g milk, 65g water.
Knead in a bread maker on the pizza dough setting.
Shape and let rise in a 35℃ oven for 30 minutes.
Steam for about 10 minutes.
Can be frozen for storage.

Oi-Kimchi
Ginger, 1 tbsp gochujang, 1 tbsp white dashi, 1 tbsp honey, powdered chili pepper.

Green Pepper Stir-fry
2 makomo dake (Japanese edible bulb), green peppers, paprika, 200g beef (seasoned with a little beaten egg, soy sauce, pepper, sake, and potato starch), green onions, ginger, 2 tsp soy sauce, 2 tsp shaoxing wine.
